Meet Sara and Max, the founders of Glasrose. The American opera singer and German born wine maker are raising their daughter on an organic vineyard filled with live oaks and herds of grazing sheep. Sharing a deep love for the land and a commitment to mindful living, the vineyard is not just their home but a testament to their creativity and commitment to sustainability. In 2025, the couple embraced a new chapter: they started formulating a unique non-alcoholic beverage made from verjus and botanicals. With Glasrose, they have created an innovative zero-proof drink, reflecting their love and connection to the land that sustains them.

Why Verjus?

Verjus is the seductively tart elixir that lies at the heart of the Glasrose experience. But what is the history of verjus?

It was once used as both a medical salve and a common tart cooking ingredient during the Middle Ages and the Renaissance.

Primarily used in Italy, France and across Western Europe in the beginning, verjus has slowly but steadily gained in popularity in recent years as an elegant component for zero-proof drinks.

The product itself comes from the pressed juice of unfermented, low-sugar grapes, and can be made from either red or white vines.

In a process traditionally known to wine growers as “fruit thinning”, verjus has historically been a byproduct of wine makers, who remove unripe grape clusters in order for the rest of the vine to ripen properly. 

At Glasrose, the modern take on creating verjus is no longer as a byproduct, but as a highly selective and intentional process: we pick our Malvisia and Syrah grapes later than is customary to capture the most perfect balance between low-sugar and high aromatics.
